Rozbrat 20 – A New Michelin Star Restaurant in Warsaw
On June 20, 2024, the international Michelin Guide announced its latest restaurant awards.
Published for 124 years, the guide is considered a bible for foodies, gourmets, and anyone interested in fine dining and restaurants. Being listed among the recommended venues is a great honor, and achieving a Michelin star is the highest recognition.
In this year’s ranking, Rozbrat 20 restaurant earned the most coveted distinction – a Michelin star. The journey to this point was not easy. Operating in Warsaw’s Powiśle district since 2015, the restaurant initially served breakfasts, then evolved into a bistro, and after a major renovation in September 2023, it focused heavily on a tasting menu, consistently pursuing the vision of becoming the Michelin-starred restaurant it is today.
Such bold and well-directed actions were made possible thanks to the owner – Daniel Pawełek, who also owns other premium-category restaurants under the Ferment Group. With his professionalism and passion for good food, together with Bartosz Szymczak – co-owner and head chef – they set clear goals.
Daniel Pawełek emphasizes, “Winning a Michelin star for Rozbrat 20 is the result of Bartek Szymczak’s tireless work. It is the culmination of eight years of total dedication to this place and the hard work of the entire team.” Pawełek is delighted with the recognition and adds, “Consistency and hard work, the two elements I believe in most, have brought us these fantastic results.”
Bartosz Szymczak also highlights the international significance of the Michelin Guide awards: “It’s great news for Poland that more stars have appeared in this year’s guide. We’re thrilled to have one of them, and that Poland is finally being recognized on the international stage.”
Gwendal Poullennec, director of the Michelin Guide, said about Rozbrat 20:
“Maintaining its local character while being one of the most important restaurants in the city, Rozbrat 20 has continually evolved over the years. Today, it is an elegant place where talented chefs prepare sophisticated dishes with a creative touch – such as a deep, delicious broth made from leftover bread. Notably, the perfectly balanced Marmite-flavored butter, which the head chef took a liking to during his time in London.”
The restaurant’s interior was designed by architect Ewelina Moszczyńska. The main dining room features a more classic style, while the second room showcases a touch of design eccentricity based on geometric forms. The space is illuminated by Catellani&Smith lamps. The walls feature paintings by Polish visual artist Edyta Hul from the exhibition “If You Can, Send Rain.” On the tables, functional ceramics by Arkadiusz Szwed from the “Bumps 2.0” series have found their place.
