“Warsaw Nocturne 1976” brings together the music of Fryderyk Chopin and the 50th anniversary of Sofitel Warsaw Victoria. The dessert is shaped to resemble the hotel’s distinctive architecture, a landmark that has been part of Warsaw’s cityscape for half a century.

Inside, chocolate mousse is paired with cherry and blackcurrant, complemented by crunchy buckwheat. Just before serving, the dessert is enveloped in cherry smoke, adding a final sensory touch and making the presentation itself part of the experience.

“Sonata di Pistacchio” is built around three distinctive flavors — chocolate, pistachio, and kumquat — which give the dessert its bold character and elegant form, inspired by the nocturnal sonatas of Frédéric Chopin.

Beneath a layer of silky chocolate lies a creamy pistachio centre, while juicy kumquat marinated in Grand Marnier provides a refreshing contrast. Its citrus notes highlight the intensity of the other flavours. Together, they evoke a nocturnal sonata – elegant, intense and full of sensual contrasts.

“Choux au craquelin” draws inspiration from Fryderyk Chopin’s years in Paris and the French pâtisserie tradition he encountered while living in France. The dessert is based on classic choux pastry topped with a crisp chocolate craquelin infused with gingerbread spices.

Inside is a dark chocolate cream enriched with Cointreau, whose citrus notes balance the intensity of the chocolate. A caramel garnish provides the finishing touch. The combination of chocolate, citrus, warm spices and caramel evokes flavours prized in refined French cuisine during Chopin’s lifetime.

“Chocolate Symphonie” was inspired by flavours particularly enjoyed by Fryderyk Chopin. The composer was known for his fondness for hot chocolate, which is why dark chocolate takes centre stage in this dessert. Its intensity is balanced by Polish fruits: blueberries, blackcurrants and raspberries.

The light chocolate sponge is enriched with acorn coffee, another drink associated with Chopin’s culinary preferences. The dessert takes its form from the French Symphonie and is built from multiple thin layers with contrasting flavours and textures. Chocolate and acorn coffee sponge alternates with rich dark chocolate cream, tart berries and a sweet cocoa glaze.
